The purpose of this visit is to conduct a routine inspection. The employee health policy is in place today. Sanitizer observed within acceptable limits. Thermolabel on heat sanitizing dishmachine activated. EHS provided information about handwashing and handwashing signs to the culinary students during today's visit. During today's visit, students were in classroom and were not in the kitchen.

This was a routine inspection. Thank you. Culinary students were observed well trained in their assigned duties. Sanitizer observed at an acceptable level. The time listed on this inspection report is for the inspection only and does not include time for typing as one other facility was inspected during today's visit and both reports were typed after their respective inspections.

  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
  • Light Bulbs / Locations where Shielding is Required
    Observation: Light bulb(s) in the dry storage area are not covered by a protective shielding.
    Correction: Provide light bulbs that are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, linens, or unwrapped single-service and single-use articles.

  • Plumbing / Maintained in Good Repair
    Observation: Plumbing connections draining into the floor drain below the Combi oven are leaking onto the adjacent floor which pools water.
    Correction: A plumbing system shall be maintained in good repair. Repair within 10 days and fax invoice to inspector.
  • Lighting Intensity / Consumer Self-Service, Reach-Ins, Other / 20 foot candles
    Observation: Observed that inadequate lighting was provided in the Victory two door upright refrigerator #2 as the light was malfunctioning inside the unit.
    Correction: Increase the lighting to provide a minimum of 20 foot candles in these areas. Replace/repair the light in the Victory two door upright refrigerator #2 within 10 days and fax a copy of the invoice for the repair to inspector.
  • Physical Facilities Good Repair
    Observation: Observed an open conduit below the prep table in the kitchen area. Unsealed, open holes may provide access for pests such as roaches and must be sealed to prevent such.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities. Remove the conduit and seal the hole within 10 days and fax invoice to inspector.
