Observation: The wash temperature of the high temperature sanitizing ware wash machine is not meeting the manufacturer's specifications. The minimum temperature was 150'F while the actual temperature was 120'F.
Correction: Discontinue the use of the ware wash machine until it is working properly. Initiate manual wash, rinse, and sanitize method to properly clean equipment and utensils. To minimize workload you can move to all single service utensils.

Correction: Provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent buildup of food debris.

Observation: The nonfood contact surface of the pan storage shelf and the spice storage shelf had accumulations of grime and debris. Provide a cleanable surface for spice shelf.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Ceiling in the storage building next door is in poor repair. Repairs to be made soon. Contractors have been out per operator. Back door self closure to be repaired. Dishwasher detergent line appeared to have an air gap preventing detergent from dispensing. Repair tech is coming tomorrow. Dishwasher will not be used today. One set of lights is not shielded near the pan storage area.

Observation: The ready-to-eat (RTE) commercially processed luncheon meat and other ready to eat products in the refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a ""consume by"" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Observation: Toilet room door is not provided with a self-closing door.
Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
