    Observation: Some tile and in poor repair and grouting missing and area in poor repair around the grease trap in the dishwasher area.(work order has been submitted) Condensation drip catch pan in over flowing outside the walk-in freezer.(corrected) Water leaking from a pipe next the mop sink and behind the water heater. Floor area next to the mop sink has a gap in the grouting allowing pests to harbor.(corrected)
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Light burned out over walk-in freezer.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Roaches found in the grease trap area below the dishwasher and next to the mop sink area.(exterminator on site and areas treated during inspection and treatment will continue)
    Correction: When pests are found use methods to such as trapping devices or other means of pest control. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floor soiled next to the walk-in freezer, around the water heater and in the mop sink area.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
