    Observation: The following equipment was observed in a condition that prevents necessary maintenance and easy cleaning:
    >>Duct tape was used to repair various equipment.
    >>Foil was used to cover ceiling window glass.

    Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability

    Observation: The sink basin at the elevated handsink is slow to drain.
    Correction: Plumbing systems and components shall be maintained in good repair.

    Observation: The following physical structure was noted in need of cleaning.
    >>Grease build-up on the floor by the grill.

    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Correction: Corrected. Discontinue storing food below waste drain lines of sinks.

    Correction: Corrected. Only approved pesticieds may be ued on the trailer and shall be applied by a certified pest control operator.

    Correction: 1) Provide a washable non-absorbent container or remove spices from the box and store on the shelf
    2) Remove the deli paper. Can use sheet pans or plasstic material (i.e. washable, non-absorbent) or do not line the shelves.
