The operator provided a metal probe thermometer, quat. test strips and an Employee Health policy at this time. A review of date making parameters also occurred during today's inspection. Permit was issued to the new owner at this time.
Cloths - Wiping Cloths - Use Limitation (corrected on site) Observation: Wiping cloths improperly stored between use ( the front service wiping cloth bucket measured 0 ppm quat. at the beginning of the inspection).
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
Food - Miscellaneous Sources of Contamination (corrected on site) Observation: An open cup of screws were observed stored on a shelf, above the rear donut prep area. The operator removed the cup of screws
Correction: Protect food from miscellaneous sources of contamination.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) Observation: The ready-to-eat (RTE) commercially processed TCS food products in the front service maketable unit refrigeration were not properly dated for disposition after opening ( observed dates indicated use by 12/29 on 1/4/16). The operator discarded the TCS food items
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
Temperature Measuring Devices Observation: The temperature measuring device in the front service maketable unit was not properly located in the warmest part of the unit.
Correction: Relocate the temperature measuring device to the warmest part of the refrigeration unit to properly represent the ambient air temperature.
