Discussed with the person-in-charge to monitor the TCS food products temperatures and adjust the Kenmore reach-in cooler ambient air settings to maintain TCS food temperatures of 41 degrees F or below.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Chipped beef, corned beef hash, and white gravy in the cookline Kenmore reach-in cooler was cold holding at improper temperatures (white gravy/corned beef hash-45F & chipped beef-49F). Products held < 4 hours and rapidly cooled.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

The operator provided a metal probe thermometer and an Employee Health policy was discussed at this time.
Note: Several refrigeration units were observed pending repairs at this time.

    Observation: Sliced tomatoes and sliced cheese, stored in the cookline Delfield reach-in cooler were cold holding at improper temperatures ( sliced cheese/sliced tomatoes-49 F). The operator discarded the TCS food products
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The cookline Delfield reach-in cooler was observed with elevated TCS food product temperatures and an ambient air reading of 54 degrees F.
    Correction: Repair the cookline Delfield reach-in cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the cookline reach-in cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Light Bulbs Protective Shielding
    Observation: Light bulb over the cookline flat top grill was observed not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

Coolers are in the process of being repaired. No TCS foods are being stored in these units. Operator to call once coolers have been repaired.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: True three door reach-in cooler observed with an ambient air temperature of 50 F. Ice was observed on the fans of this unit. Ambient air temperature of the under counter cooler was slightly elevated. Foods were moved from this cooler and data logger was placed in this unit to monitor for the next 24 hours. Door to the Delfield reach-in freezer does not close properly and is in need of being repaired.
    Correction: Repair the refrigeration to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the refrigeration, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Small amount of build up noted on the ice machine deflector shield.
A follow-up inspection will occur on/about August 20, 2015.

    Observation: Sliced cheese in the top of the make table cooler, foods in the under counter cooler and the butter in the three true reach-in cooler cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: True three door reach-in cooler observed with an ambient air temperature of 50 F. Ice was observed on the fans of this unit.     Observation: The following utensils were observed soiled to sight and touch: ice scoop.
    Correction: Clean and sanitize these surfaces for food contact.
08/10/2015Routine
Operator is going to call repair technician to service make table cooler and three door true reach-in. Will return Monday to set up data loggers in these refrigerators.
Discussed cooling methods for foods with kitchen staff.
Ceiling tiles for the kitchen have been ordered.
Provided operator with FDA form 1-B. Have all staff review and sign this form. Keep signed forms in the facility to show to the inspector. Post a blank copy in the kitchen.
Basic food safety training course schedule was provided to the operator.
Dish machine is working properly.
Buffet not observed during todays inspection. Sneeze guard needs to be set up for buffet.

  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: In use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Foods in the make table cooler and salsa in the three door reach-in cold holding at improper temperatures. Ambient air temperature of make table cooler observed at 41 F and ambient air temperature of the true three door reach-in observed at 50 F. Foods were either discarded or moved from these refrigeration units.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) foods in the refrigerator, several items should have been discarded several days ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

  • Toilet Rooms - Enclosed
    Observation: Toilet room door is not provided with a self-closing door. The only bathroom door that is not in need of a self closing device is the women's rest-room on the smoking side. Bathroom doors must be kept closed.
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

Replace water damaged tiles in the kitchen.
Lights in kitchen must be covered.
Caulk hand sinks and three compartment sink.
Metal stem thermometer needed (0-220 degrees F)
Quaternary ammonium test kit on order.
Store breads in the bottom of refrigerators. Do not over stock refrigerators.
Remove hand soap and paper towels from the mop sink.
Go through product and inspect for dates and dented cans.
Clean slicer prior to use (wash, rinse and sanitize)
Weather stripping needed for exterior doors.
Thermometers are needed on the bar dishc machine, as well as manufacturers data plate. Repair dish machine if it is going to be used.

No violation noted during this evaluation.
