The front service under counter refrigeration unit (under the flat top grill) was observed not-in-use and pending repairs. The operator was informed that the foodservice equipment is to be maintained for on premise use. In addition, the operator added an additional maketable unit to accommodate cold holding of TCS food products for in-use, at the front service grill area.
No violation noted during this evaluation.		12/31/2015Follow-up
The operator provided a metal probe thermometer, quat. test strips and an Employee Health policy was available at this time.
Note: Several refrigeration units were currently pending repairs and not currently in-use ( maintenance of equipment and potential harborage areas were discussed as it relates to the unused equipment).
Cooling, refrigeration, holding, food storage logs and documents were discussed and issued at this time. Also information an document's for the use of time-in-lieu of temperature was issued at this time.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate ( ribs, yams, pulled pork, mac & cheese prepared 12/16 & 12/17 were observed with product temperatures of 42F -47F). Cooling logs and cooling parameters were discussed with the person in charge at this time.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: TCS food products in the front service under counter maketable unit and several items in the walk-in cooler were cold holding at improper temperatures. TCS food products were held < 4 hours and rapidly cooled.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The front service maketable unit and the line reach-in cooler were observed with ambient air readings of 54 degrees F and stored and previously stored TCS food product temperatures were observed with elevated temperatures. The operator has called for servicing of the refrigeration units.
    Correction: Repair the front service maketable unit and the line reach-in cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the front service maketable unit and line reach-in cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket to the front service maketable unit was observed torn.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
