Discussed with the person in charge: 1-Sealing the gaps in the wall under the kitchen hand sink around the water supply and drain lines. 2-Ensure that the mops sink and both restroom sinks are caulked along the walls. 3- Ensure all refrigeration units are set at 36'F to 38'F in order to hold all potentially hazardous foods at 41'F or colder 5. Provide a detailed and thorough cleaning of all floors, walls, and ceilings, as well as all equipment, prior to opening for business. The bar area is not approved at this time. Another inspection for the bar will be required when the bar is completed. Please contact the Health Department when ready for the inspection. A copy of the Certificate of Occupancy has been received from the operator. This facility is in substantial compliance and is eligible for a permit from the Virginia Department of Health. The following items were discussed with the PIC during this preopening inspection: The following was discussed with the person in charge: 1-Ensure all coolers and freezers are turned on with thermometers provided prior to the next inspection. Coolers should read roughly 38'F to keeps foods at 41'F and below. 2-Remove all shipping plastic from equipment 3-Install molding throughout the kitchen and prep area 4-Provide a thorough and detailed cleaning of the entire facility 5-Ensure all equipment, coolers, utensils, etc. are cleaned and sanitized prior to use. 6-Remove all construction equipment 7-Ensure all hand sinks are fully equipped with soap, paper towels and a handwashing sign. All hand sinks must reach a minimum water temperature of 100'F. 8-Submit a copy of the certificate of occupancy from the building department to the health department -Recommend another pre-opening inspection once the facility is finished with construction.
