Observation: Mold growth was observed on the surface of a board where chemicals were being stored. Said area was next to dry goods/food storage area in kitchen.
Correction: Remove/ replace the board with clean non absorbant material.

Observation: The operator observed eating in food prep area while preparing/handling food and contacting clean food contact surfaces.
Correction: All employee who are eating must be in the designated break area away from food preparation/handling areas to prevent cross contamination.

Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: Observed accumulations of old food residue observed on the floor of reach in freezer.
Correction: Maintain food contact surface/nonfood-contact surfaces of equipment clean.

Observation: The handwash station at the kitchen is being used for purposes other than washing hands in that said sink observed with toys being placed in it.

New employees need food sanitation certification.
- Warewashing Equipment, Cleaning Frequency (repeated violation)
Observation: The interior surfaces of the mechanical warewashing machine are soiled with (food debris, limescale) that may decrease the effectiveness of the unit.
Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.
- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) (repeated violation)
Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F.
