    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: whisk and serving spoon. PIC removed all items to the warewashing area.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Surfaces of the upsplash of the coffee maker was in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris.
    Correction: Clean the surface of upsplash of the coffee maker at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Consumer self-dispensing bulk food bin containing dry cereals are not properly labeled.
    Correction: Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: 1. the manufacturer's or processor's label that was provided with the food or, 2. a card, sign, or other method of notification that includes the information specified in this section.
  • Temperature Measuring Devices (corrected on site)
    Observation: There was no temperature measuring device located in the RIC's. PIC has ordered.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Cabinet door underneath of the buffet is broken off.
    Correction: Repair the EQUIPMENT to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the EQUIPMENT, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed the following with the Persons in Charge:
1. When using concentrated bleach for sanitizing equipment, ensure the mixture is tested and is measuring between 50 and 200 parts per million prior to use.
2. Recommend using either the container provided for waffle batter, or put lids on individual containers to ensure product is protected at all times.
3. Overall, significant improvement is noted since last year's routine inspection. Thank you!

    Observation: Food stored uncovered on the buffet line. Observed individual containers of waffle batter stored uncovered on the buffet line, leaving them subject to contamination.
    Correction: Store food where it is not exposed to splash, dust, or other contamination to prevent contamination.
  • Single-Service and Single-Use Articles, Use Limitation (repeated violation)
    Observation: The bulk milk container tube was observed extending more than 1 inch from the chilled dispensing head.
    Correction: The bulk milk container tube shall be cut on the diagonal to extend no more than 1 inch from the dispensing head to prevent contamination and to allow drainage of the tube.
  • Single-Service and Single-Use Articles, Use Limitation (repeated violation)
    Observation: The bulk milk container tube was observed not cut on the diagonal (45 degree angle).

Significant improvement in facility overall since previous inspection was noted during today's inspection. It is recommended that areas such as cabinets, drawers, and interiors of reach in coolers be wiped out more frequently.
PIC and other employees have successfully completed an online food safety course since the previous inspection and was able to demonstrate knowledge in food safety pertaining to this facility's operation. Thank you!

    Observation: The employee is drinking from an uncovered container in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

    Observation: Chlorine bleach solution was measured at above 200 parts per million at start of inspection. PIC emptied the sink basin and re-filled with sanitizer at a concentration of 50-100 parts per million.

    Observation: The following nonfood contact surfaces have accumulations of grime and debris: The black plastic cart near RIC, inside and outside of the RIC including the gaskets, the drainboard on the 3-compartment sink, the floor fan in the kitchen, inside and outside of the milk dispenser, inside and outside of the waffle batter dispenser. The Chest freezer in the kitchen needs to be defrosted so it can be easily cleaned.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The food-contact surfaces of the equipment are not being sanitized. When asked, the Person in Charge could not produce an appropriate means of sanitizing equipment. Person in Charge located bleach and set up the three compartment sink with a bleach water solution measuring at approximately 100 parts per million.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

    Observation: The indoor ceiling material located in the kitchen does not meet the standard of: 1. smooth, durable and easily cleanable 2. nonabsorbent

    Observation: Light bulb in closet in the kitchen where fruit is stored is not shielded, coated, or otherwise shatter-resistant.

    Observation: The following areas in the kitchen and serving area are in need of cleaning: Ceiling vent in the kitchen, the floor in the kitchen, the walls in the kitchen, the wall behind the serving counter and the drawers and couboards below the serving counters.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Containers of Lysol, Spray Paint and Carpet cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed these items stored on the food storage shelf above the single service utensils and above the packages of hot chocolate. Also observed a bottle of cleaner stored by microwave.
    Correction: Containers of Lysol, Spray Paint and carpet cleaner must be located in an area that is not above food, equipment, utensils, linens or single service items.
