Monitor refrigeration with food items currently observed at 41 degrees, the maximum cold holding temperature.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: Sausage on the upper portion of the pizza prep unit cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Equipment - Good Repair and Proper Adjustment Observation: Hot holding display was observed with a burned out heat lamp.
Correction: Repair the display unit to restore a state of condition that allows for proper operation per Part IV, Article 1 and 2 of this chapter.
Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration at the 3 compartment sink. Dispenser observed not working correctly.
Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.

Cole slaw maintained in the frozen containers (not a mechanical refrigerator). Monitor so that it does not go above 41 degrees or time as a public health control can be used (use for 4 hours maximum and discard as long as it does not reach 70 degrees and the original product comes from a refrigerator that maintains 41 degrees or less). No violation noted during this evaluation.

Risk Factor
Have the chemical provider supply a poster or document on proper sanitizer level (PPM) and contact time for sanitizing dishes in the 3 vat sink.
Equipment - Good Repair and Proper Adjustment Observation: Observed the Randall refrigerator unit hold some food below 41, but not all. Grilled chicken on salads observed at 42 and 43 degrees.
Correction: Adjust the refrigerator so that all foods cold hold at 41 degrees or below.

Temperature Measuring Devices (corrected on site) Observation: There was no temperature measuring device located in the Sanyo refrigerator.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Equipment - Good Repair and Proper Adjustment Observation: The Sanyo refrigerator was not maintaining food at the proper cold holding temperature.
Correction: Adjust the Sanyo refrigerator so that it cold holds food at 41 degrees or less. The piece of equipment should maintain proper temperatures for cold holding food even during heaviest use.
