This inspection was a risk factor inspection that focused on the 5 risk factors for foodborne illness (food from unapproved sources, inadequate cooking temperatures, inadequate holding temperatures, improper employee health and hygiene, and cross contamination of food and equipment). Good retail practices (GRPS) observed were discussed with operator and/or staff at time of evaluation. Some of the GRP's observed are: blade worn on can opener, front and interior of cabinets noted in need of cleaning, reach-in freezer/refrigerator combo cooler bottom door gasket torn, coving missing from small section on side wall, side wall damaged in two areas.

    Observation: The prepared ready-to-eat (RTE) foods in the refrigeration unit is not properly dated for disposition. The dates written on the food containers exceed 7 days.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) ham and turkey in the refrigerator, the food should have been discarded 2 days ago. The pork BBQ should have been discarded 6 days ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening.     Observation: Plastic food containers are cracking and a couple of utensils were damaged and observed in a state of repair and condition preventing effective maintenance and easy cleaning.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: clean metal food containers in clean dish rack.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Food service equipment and single service articles were found stored in the back storage area where the insulated ceiling is falling. Tiny fiberglass like fibers/ insulation dust was found on food packaging, single service packaging and on food storage containers and equipment that was stored in that room.
    Correction: Store these items in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.

    Observation: Light bulb in fixture in kitchen ceiling is not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
  • Pests - Controlling Pests*
    Observation: Large rodent droppings were observed in back left corner of large storage room off of kitchen. Numerous devices have been laid out to help control rodents and the facility is employing routine pest managment services.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Continue receiving routine pest managment and clean old rodent droppings.

    Observation: Working containers of bleach and window cleaner are not properly labeled. The container labeled bleach had no chlorine residual and the window cleaner was not labeled window cleaner.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

This inspection was a risk factor inspection that focused on the 5 risk factors for foodborne illness (food from unapproved sources, inadequate cooking temperatures, inadequate holding temperatures, improper employee health and hygiene, and cross contamination of food and equipment). Good retail practices (GRPS) observed were discussed with operator and/or staff at time of evaluation. Some GRP's Observed: Front of cabinets soiled and inside of some, outside of some food containers soiled, freezer door handle broken, the dish drain is rusting (i suggest using bar keepers cleaning powder, itcan probably take off the rust), label all foods in containers (ex. sugar, salt, etc...), clean outsides of bottles (like the pretzel water bottle). The bare wood storage shelves in the back may need to be sealed (where single service articles are stored), so when they are wiped down they don't absorb moisture.

    Observation: Utensils and food containers were observed soiled to sight and touch. Dishes were washed, but still soiled. Some food dispensing containers are not being cleaned often enough and some utensils that are used to dispense sugar and popcorn flavoring are not cleaned often enough to prevent buildup.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: The ice bin used to tranfer ice was observed soiled with accumulations of grime and debris.
    Correction: Clean the surface at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications. The ice bin is being discarded.
