    Observation: The methods used for cooling chili were not adequate.
    Correction: Discussed pre-chilling canned ingredients and meat. Advised phf/tcs foods stored at ambient air temperature shall cool to 41* within 4 hours. Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

    Observation: The following equipment was observed in a state of repair and condition preventing effective maintenance and easy cleaning:
    1.Spatulas located at clean utensils area was observed chip around the edges.
    2. Metal ice cream scoop was observed without end cap and metal coating peeling and deteriorating.
    3. White plastic containers at ice cream machine cracked, chipped and worn.

    Correction: Discard, replace or repair the utensils to provide proper operation, accuracy, functioning, maintenance, and cleanability. Operator discarded the utensils.

    Observation: Ice maker arm was in contact with ice and observed to have a black and pink slime growing on it.
    Correction: Clean the ice maker at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: The nonfood contact surface of the following equipment has accumulations of grime and debris:
    1.Magnetic knife holder dirty.
    2. Multiple sheet pans had a build up of carbon.
    3.Storage racks throughout establishment greasy and dirty.
    4.True Freezer gasket dirty top.
    5.Ice cream cooler observed with moldy gaskets and food debris inside of the cooler.
    6. Cambro ice holder had mold on the inside parts of the bin.
    True reach-in refrigerator gaskets dirty at the top.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Pans and drinking cups were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Double entrance at the side of the establishment was observed damage at the bottom corners of the door. The door was bent to the extent that would allow vermin to enter the establishment.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: The following physical structure is not maintained in good repair:
    1.Threshold at delivery door deteriorating and tiles damaged.
    2.Tiles damaged throughout the facility.
    3.Grout eroding in various areas of the kitchen.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: The following physical structures noted in need of cleaning:
    1.Floor and walls in the soda dispensing area observed dirty.
    2.Paint peeling at delivery door.
    3.Walk-in cooler located in the kitchen had dirty floors.
    4.Walls surrounding dishwasher were observed with mold and mildew.

    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Cooling must be achieved once product reaches 135 to 70 in 2 hours and from 70 to 41 in the following 4 hours

    Observation: ham , coleslaw and hot dogs and sliced mushrooms ( canned ) topline and inside the grill preparation refrigeration unit were 54 -60 degrees. Did not hear fan running. Checked plug of unit and determined that it was not solidly in the outlet . Plugged into wall --- fan of compressor turned back on . No one could determine when electrical connection lost .
    Correction: All potentially hazardous product of the unit was discarded at the time of the inspection . Staff reviewed with me on product that could be kept -- wing sauce / BBQ sauce - chopped onion - mushrooms and pepper slices and lettuce .
    ADVISE that staff check temperatures daily ---- there is a difference between cool and cold ( < 41 )
