The purpose of this visit is to conduct a risk factor assessment. The purpose of today’s visit was to conduct a risk factor assessment inspection. Employee Health Policy in place. Heat sanitizing dishmachine activated thermolabel. Observed facility clean and organized. Several employees washed hands using proper technique today.
IMPORTANT:
1. Cease any ROP activities until an approved HACCP is submitted to the health department.
2. Provide a Northern Virginia Photo Identification Certified Food Manager Card within 10 days to the Health Department. I have provided you with the updated information on the location to obtain the photo.

  • Critical: Cook-Chill & Sous Vide without Variance, Requires HACCP Plan
    Observation: A HACCP plan has been implemented by the food establishment for the use of a cook-chill process, but the plan does not include the following information:
    1. Complete documentation including corrective action processes.
    2. Hourly datemarking and time on the actual product.
    3. The HACCP has not been approved by the health department.
    Correction: Cease ROP at this facility until an approved HACCP is submitted to the Health Department. Unless a HACCP plan is implemented to include the information listed in Section 3-502.12(D)(1)-(4), a variance from the Health Department to use the cook-chill process will be required.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Within 10 days, Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. 6066 Leesburg Pike, Suite 200-B, Falls Church, Virginia 22041. A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action. Please place name and address of this facility when faxing documentation to the health department.
  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed the handsink at the bar being used to store a container of strawberries.
    Correction: Manager removed the container of strawberries and reminded the foodworker that handsinks are to be used for handwashing only. Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.

Observed several employees washing hands using proper technique. Temperatures observed were within acceptable limits. Wiping cloth solution measured at an acceptable limit. Employees are aware of their assigned duties. No violations noted during today's visit. Time was for inspection only. Thank you.
