    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

A new thermostat has been added to the make table on the right hand side of the cook line. Foods in the bottom were holding at the proper temperature, however foods in the top were ranging from 45-48F.
Operator to check three items in the top, (pork, chicken and crab meat), until next Monday and record these temperatures to show the inspector.
Recommended doing smaller portions on the fried items on the buffet. These items should be checked every hour with a calibrated food thermometer to ensure they are held at the right temperature.
Will return on/about August 31, 2015.

    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
