Follow up regarding the sanitizer for aluminum contact services. Provided literature on Quat based sanitizers. Person in charge has now received a quat based sanitizer and that will be used to for the equipment and food contact surfaces instead of a chlorine based sanitizer. Rear thaw refrigerator unit has been cleaned as well. Person in charge to ensure that sanitizer test kits being utilized more frequently. Provided sanitizer monitoring log, duties and demonstration of knowledge regulations. Rear fridge unit observed to need cleaning bottom and underneath. Slight adjustment to layout possibly in the future by 3-C sink. Very receptive and pro-active owners.

Employees observed frequently washing hands, wearing gloves when cutting and handling ready-to-eat foods, when handling raw chicken (yellow gloves) and washing hands between each product. Preparation areas and cold holding for all chicken kept separate from all cooked and ready-to-eat foods. All foods are date marked as required. Management provides food safety training to all new employees. Fly control provided by licensed exterminator, have air curtain on back delivery door, catch traps in back (out of food prep area) and front customer areas and by making sure all pooled water is removed from outside areas. Management has done a good job of training employees on food handling practices and should be commended for their efforts in training employees and assuring foods are being prepared and handled in a safe manner.
