Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Sandwiches with mozerrella cheese, cold cuts and yogurt parfait registered at a range of 51-61 degrees F in display case refrigeration unit. Said unit registered at 49 degrees F.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Operator voluntarily lowered the temperature of said unit to 39 degrees F.
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Physical Facilities in Good Repair Observation: Heavy accumulation of condensation water observed in all three low boy refrigerators in the facility.
Correction: Maintain equipment in good repair.
