Routine inspection conducted prior to Summer Camp opening. No foods that require refrigeration were on the premises during inspection. Caretaker was the only personnel on premises during inspection. Discussed with Person in Charge: 1) Food service company to operate facility during summer camp, will provide all foods from approved sources. 2) Wash, rinse and sanitize all utensils prior to use. Facility is in substantial compliance of Commonwealth of Virginia's Food Regulations. Permit for 2014 issued and report e-mailed to PIC.
- Temperature Measuring Devices (corrected on site)
Observation: There was no temperature measuring device located in the RIC and RIF. Caretaker said he would put thermometers in the units.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: can opener had rust on it, caretaker said they replace it every year.
Correction: Clean and sanitize these surfaces for food contact.
- Equipment - Non-Food Contact Surfaces and Utensils (corrected on site)
Observation: Interior of ice machine appeared to have a build up of black mold in contact with non-potentially hazardous food items. Recommended that the ice be discarded and the interior of the ice machine be cleaned and sanitized before reloading with ice. Caretaker started working on removing ice during inspection.
Correction: Clean the surface of ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
- Non-Food Contact Surfaces (corrected on site)
Observation: The nonfood contact surface of the following equipment have accumulations of grime and debris: 1) the shelf above the stoves 2) exterior of the microwave 3) exterior of the RIC's and RIF's 4) interior and exterior of stoves 5) wall and floor under and behind the stoves. Caretaker had begun working on these during inspection.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition (corrected on site)
Observation: Vent filters in the hood system were not in clean condition. Caretaker said these would be cleaned before opening.
Correction: Maintain hood system vent filters in a clean condition.

Observation: A sign or poster that notifies food employees to wash their hands is not provided at the lavoratory in the restroom.

- Physical Facilities - Cleaning Frequency and Restrictions
Observation: The following physical structures in the noted in need of cleaning: intake vent grill located in wall behind can storage racks.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
