Temperature logs will be used with temps taken at breakfast, lunch, and dinner. Travel path tracking will be done every hour. Employee Health Form 1B observed. Veggie Wash observed at 25 ppm. Used only for lettuce. QA sanitizer at 3 vat sink. all other items observed as needed. Ok to permit once CO ready from Building. (Final Building and Fire inspections) 1st inspection due 30- 45 days from opening. Steritech comes quarterly for QA. A ServSafe PIC will always be on duty.
