The hand sinks are in use with warm water, soap, and paper towels. Proper glove use observed. 0-220 thermometer is available for use. PIC is knowledgeable of proper food safety standards. Establish a proper cleaning schedule to address cleaning in and around the deep fryer and under the dry storage areas. Have the mop sink repaired by the next inspection.

Observation: The mop sink wall is missing tiles and the wall studs are exposed and appear to have rotted, the grout on the floor in and around the mop sink has came up and allowing water and debris to pool. There are floor tiles in front of the 3 bay sink that are loose and allowing water to pool.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Replace and repair the broken floor tiles and grout in front of the 3 bay sink. The mop sink area needs to be repaired so that no wall studs are exposed and the floor and wall are smooth and easily cleanable.

Observation: The deep fryer hood and the area in and around the deep fryer along with the permitter of the storage areas is noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
