Areas reviewed: 1) food and equipment temperatures (hot holding, cold holding & reheating), 2) food sources, 3) washing, rinsing and sanitizing of food contact surfaces, 4) commercial dishmachine operation (proper sanitizing temperature), 5) general cleaning and kitchen organization and 6) dry storage room and food storage areas. Discussed: 1) employee health policy, 2) food storage order (information provided to manager), and 3) rapid cooling of any leftover sauce and / or foods. Recommendation: Provide hearing protection for the kitchen personnel operating the dishmachine until it is fully repaired. Inspection reviewed with manager.
