  • Sanitizing Solutions, Testing Devices (corrected on site)
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. A quaternary ammonium test kit is needed. PIC stated that test kits will be purchased.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Discussed with person in charge:
1, Facility may be changing to chlorine sanitizer only after the Steramine tablets are complete.
2. PIC stated that the facility does not do any cooking or cooling.
3. Facility is using a homestyle dishmachine to wash, rinse, and sanitize dishes equipped with a sanitizing rinse in the wash process. EHS left a heat tape strip for the PIC to test the temperature of the sanitizing rinse. Please contact the health department concerning the heat tape results.
4. No food prep was observed during this inspection.

  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. A quaternary ammonium test kit and a chlorine test kit are needed if these sanitizers will be used for food contact surfaces. PIC stated that test kits will be purchased. EHS provided a few test strips of each type of sanitizer to use until the test strips are obtained.
    Correction: Obtain a chlorine test kit and a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Cutting Surfaces (corrected on site)
    Observation: The green cutting board on the storage rack was observed to be heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. PIC removed the cutting board from the kitchen.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer being applied to food contact surfaces does not meet the requirements. Chlorine sanitizer measured greater than 200ppm. PIC corrected the concentration to 100ppm.
    Correction: Utilize only chlorine sanitizer that meet the requirements when applying to food contact surfaces. Chlorine sanitizer range is 50ppm - 200ppm.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: 2 cheese graters and the can opener blade. Observed PIC voluntarily discard cheese graters and move can opener to the three compartment sink to be wash rinsed and sanitized.
    Correction: Clean and sanitize these surfaces for food contact.
