  • Cloths - Wiping Cloths - Use Limitation
    Observation: There was no detectable sanitizer in the bucket of wet wipecloths on the table nearest to the manager's office, as measured with our "quat" type test strips. Also, there was no detectable sanitizer in the bucket of wet wipecloths on top of the mechanical dishwasher.
    Correction: A "quat" (quaternary ammonium) type of sanitizer is used for storage of wet, or damp, wipecloths in this kitchen. For "quat" type sanitizers, the available chlorine level needs to be the level specified by the manufacturer of the "quat" type sanitizer, stated on the stock bottle (200-400 ppm). Sanitizer strength diminishes with heavy use, and time. Sanitizer levels need to be monitored more frequently, using "quat type test strips, during each day, so that when a bucket of sanitizer is heavily used, the solution is replaced with a newly made sanitizing solution every few hours, before the available chlorine level goes below 200 ppm.
  • Sanitizing Solutions, Testing Devices
    Observation: The "quat" type sanitizer paper test strip roll that the facility had on hand, at the time of the inspection, had areas of visible discoloration, indicating that the test strip roll had been previously exposed to moisture or steam, making the roll of test strips inaccurate.
    Correction: The facility needs to obtain a new roll of test strips for monitoring "quat" type sanitizing solution available chlorine levels.

  • Critical: Backflow Prevention, Air Gap*
    Observation: The rinse arm hose assembly, in front of the mechanical dishwasher, has broken. The sprayer head is now hanging too low, creating a possible back-flow issue.
    Correction: We require that there be an "air gap"at least one inch wide between the bottom of the sprayer head, and the top of the "rim" of the steel table, associated with the mechanical dishwasher. The rinse arm hose assembly needs to be replaced with a new one, as soon as possible.

    Observation: Two of the four light bulbs under the exhaust hood are burned out/not shining.
    Correction: These two bulbs need to be replaced.

  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: There was a resealable plastic bag containing diced, precooked, del-style ham, which had a label on it which said "use by 28-Jan-2013," in the McCall refrigerator.
    Correction: Accidently, this resealable plastic bag of ham had a label on it that said "use by 28-Jan-2013." The label should have said "frozen on 28-Jan-2013," instead. Once the ham was diced, and placed in the plastic bag, and frozen-on 28 -Jan-2013-it could safely remain in the frozen state for an extended period of time. The product was still frozen, at the time of the inspection-so it was clear that the food had not been at above frozen temperatures for more than 24 hours-the maximum period of time that cold foods may stay at refrigeration temperatures is 7 days, prior to discarding. The ham was safe to eat, but it was incorrectly labeled. Additionally, once the ham finishes thawing , if not eaten within 24 hrs. of thawing, the ham needs to be marked with an additional label which says "use by 6-Mar-2013." The establishment needs to be more careful with its labeling procedures for potentially hazardous ready-to-eat foods, such as the ham.
