    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

    Correction: Store the pizza pan and wooden pizza paddle in a clean, dry location where they are not exposed to splash, dust or other contamination at least 6 inches above the floor.

    Observation: The nonfood contact surface of the wooden legs of the shelves under the front service counter is not designed or constructed to be easily cleanable.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Need to paint or apply a sealant to the wooden legs.

    Observation: Single service pizza boxes observed stored directly on the floor.
    Correction: Store single service items in its original protective packaging at least six inches off of the floor onto approved shelving with legs or casters.

Need to obtain a thin tip probe thermometer
Need to fill in or seal the holes on the floor underneath the wooden bar counter
Need to seal the base where the wooden counter leg meets the floor
Need to seal the base of the mop sink that meets the floor
Make sure the walk-in cooler is maintaining 41°F or less before putting food in the walk-in
Recommend more lighting or a higher wattage bulb per the specifications of the fixture in both rest-rooms
