| Observed no food preparation at the time of inspection. Submit water sample test results to the health department as soon as possible. The health permit can not be renewed until the water is tested and found negative for total coliform and E. Coli. Discussed the following with the person in charge (PIC): 1. Food sources are Restaurant Depot, Walmart, & Sam's Club. 2. Ketchup and mustard are dispensed in squeeze bottles. All other condiments are dispensed by employees in individual containers (BBQ sauce, mayonnaise, etc.) 3. Commercial ice is purchased for the sno cone machine. 4. Recommend posting the employee health policy in the unit. 5. BBQ is provided occasionally. It is cooked, cooled, and reheated (in the microwave oven) on site.

| Unit was not in operation at time of inspection. Normal hours of operation are 2pm-12am Saturdays, March-November. Menu includes hamburgers, hot dogs, fried chicken, fried shrimp, BBQ, fries and commercial pre-packaged chips/ candy. Suppliers include Walmart, Sam's Club, and Murry's Steaks. Hamburgers are received raw and frozen and go directly from frozen to cook. Chicken and shrimp are frozen and pre-cooked. BBQ (pork) is cooked, cooled and then reheated for hot holding.
