Very clean and orderly facility. Hand washing sinks available and in use. Staff is washing hands and properly using gloves when working with RTE food items. Good equipment temperatures observed. Reviewed food safety information, employee health code with the PIC.

    Observation: The various equipment along the side and back walls, including the 3 compartment and 2 compartment sink are not sealed to adjoining equipment or walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
  • Critical: Pests-Controlling Pests* (corrected on site)
    Observation: Observed methods are not being used correctly and are ineffective in the control of pests
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required. Discussed proper techniques and approved methods with maintenance. Any application of any rodenticide or pest control sprays shall only be applied by a licensed professional.

Reviewed food safety information, employee health code, and discussed with the PIC increasing the cleaning frequency of the students microwave in the lunch room.. Discussed the need to seal behind the 3 compartment sink and the 2 compartment sink along the back wall to prevent water and debris from going behind the sink and down the wall. This gap is larger than what could be sealed with silicon, so the material used should be a non-porous and a non- absorbent material, any smaller cracks should be sealed with silicon.

  • Walls and Roofs - Exterior Walls and Roofs - Protective Barrier
    Observation: Exterior walls of the food establishment are not protecting the establishment from Pests/animals.The window behind the 3 compartment sink has been removed and boarded up with plywood. There is a 1/2 - 3/4 inch air space between the outside brick and block that could allow pest entry into the establishment. This space along with several holes in the plywood should be sealed to prevent entry. In addition ( if the plywood is to remain for a period of time) it should be sealed or covered to create a smooth, non-absorbent, cleanable surface behind the sink.
    Correction: Repair the window of the food establishment so as to protect against Pests/animals

    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin ( janitor's closet).
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
