  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 140*F.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. Dishes may be washed at the dishwasher,but will have to be sanitized at three compartment sink.
  • Toilet Rooms - Enclosed
    Observation: Toilet room door is not provided with a self-closing door
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

Due to the age of the building, the facility does not comply with current code requirements. In the event of a change in operator or remodeling, the facility must be brought up to the current code requirements. This may include the addition of one or more hand sinks, improved lighting, repair of structural deficiencies, and repair or replacement of damaged equipment, and proper installation of laundry facilities. Note: Improper cold holding temperatures in the walk-in and upright reach-in may have been caused by the defrosting schedule of the units.

    Observation: Hamburgers 122*F-131*F, mash potatoes 124*F hot holding at improper temperatures.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.

    Observation: Backflow or backsiphonage prevention device not available on the mop sink, threaded faucet as required by law.
    Correction: Provide a backflow or backsiphonage prevention device on all threaded faucets.

    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the mop sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

    Observation: The following physical structures is not maintained in good repair:
    1) Holes in the wall located behind the dishwasher.
    2) Floor under dishwasher observed with cracks.
    3) Wall damage in the walk-in cooler.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Bare wood pallet used to store chemicals in the mechanical dish wash area.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Person in charge mentioned she would remove the wood and use plastic milk crates.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket to the Hobart reach-in refrigerator was torn.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of mold on the following nonfood-food contact surfaces: Air compressor inside of the walk-in cooler, walls of walk-in cooler.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities in Good Repair
    Observation: The following physical structures were not maintained in good repair:
    1. Walls in the walk-in cooler noted with cracks and damaged tiles.
    2. Cracks in the floor under and around mechanical dishwasher.
    3. Ceiling and wall adjacent to the serving line was not sealed.
    4. Ceiling and wall in dry storage room not sealed.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Per manager facility may get new walk-in. If walk-in is stored in dry storage lights dry storage need to be shielded and/or shatter proof.

    Correction: Repair or Replace.

    Observation: The pressure gauge for the high temperature warewash machine was above 25 PSI.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. The range for proper operation is between 15 and 25 PSI. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

    Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: slicer
    Correction: Clean and sanitize these surfaces for food contact.

    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Correction: Repair and maintain all plumbing components ans fixtures.
