Make sure that chlorine test strips are readily available and used every time wash/rinse/sanitize procedure is done.
If unable to procure hand washing signage for sink and lavatories, please contact Health Dept. and we can provide.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The ready-to-eat (RTE) commercially processed chili, nacho cheese, sliced tomatoes in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The sign that notifies food employees to wash their hands is not clearly visible.
    Correction: Provide a sign/poster that is clearly visible to all employees

    Correction: Clean and sanitize the machine as needed
  • Physical Facilities in Good Repair
    Observation: Observed hole in cinderblock wall by hand sink
    Correction: Repair hole in wall within 90 days

Recommend permit. Menu is low risk. Many of the members involved have successfully completed the 4 hour Cooking for Crowds class offered through the local extension office.At least one of these members should be on-site at all times to oversee food safety.
Hot hold chili, cheese, and hot dogs at 135 degrees.
Re-heat the products on a hot plate or microwave before placing in pre-heated crockpots/slow cookers.
Stir contents of crockpots/slow cookers often to help maintain temperature throughout.
