    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Water Pressure
    Observation: Hot / Cold water under insufficient or inadequate pressure was found to serve the following equipment: handsink
    Correction: Inadequate water pressure could result in improper handwashing or equipment operation. Restore water under sufficient and adequate pressure to the hansink immediately. Inspector could wash hands however the pressure was very low operator agreed to have a plumber look at the handsink to increase presure as soon as possible.

    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Slaw and potato salad were placed in an ice bath during the inspection.

    Observation: Single service items observed unprotected from contamination. Operator storing single service items on the ground outside of the unit.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser.

    Correction: Repair and maintain all plumbing components ans fixtures.

    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. Operator to work on screening for the outside of the unit.

Having a discussion with management about pressure for the mobile unit handsink three compartment sink is pressurized with a pump. Need test strips for chlorine. Sealing round hole in the floor near of the door. New air thermometer for the refrigerator. Discussed employee health and employee drinks. Outdoor cooking guidelines reviewed a copy left with the operator.
