A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Operator ageed to discard during the inpsection.

    Observation: The interior surfaces of the mechanical warewashing machine are soiled with (food debris, limescale) that may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.

    Observation: The nonfood contact surface of the wire shelves in the walk in cooler has accumulations of grime and debris.

    Observation: Soiled single-use gloves still in use. Preping raw chicken with gloves handled refrigeration doors before removing soiled gloves left raw chicken peices on the door handle.
    Correction: Discard gloves once soiled. Oerator had staff remove gloves during the inspection and wash and sanitize the door handle.

    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials. Operator provided paper towels during the inspection.

Staff failed to wash hands after handling raw meat and engaging in handling clean equipment.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task. Stopped the staff and corrected during the inspection.

    Observation: Improper handwashing procedures observed. Employee failed to wash hands for 20 seconds.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water. Operator corrected during the inspection.

    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands. Staff handled raw shellfish with bare hands rinsed hands off at the dishmachine then handled clean equipment.

Operator discarded during the inspection. Discussed proper cooling methods with the operator.

    Observation: Raw fish in the top of the sushi prep table and tofu at the hibachi grill cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Fish was relocated during the inspection in the display box for one hour removed from refrigeration that was maintaining 40 degrees. Tofu stored on top of vegetables at the hibachi prep box was discarded during the inspection.
