  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site) (repeated violation)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 25 parts per million when the pH is at 10 or less and the water temperature is at 120°F.

  • Gloves - Use Limitation
    Observation: Cooks walking around kitchen touching utensil, dishes, equipment and then touching RTE foods without changing gloves
    Correction: Have cooks change gloves and wash hands between tasks to decrease cross contamination
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: dishes not being sanitized when tested. Dish machine not sanitizing at all
    Correction: Call repair man to fix machine. Set up 3 compartment sink for sanitizing of dishes. Manager set up sink and tested to read -50-100ppm. Call me when machine is fixed.
  • Equipment and Utensils, Air-Drying Required
    Observation: Dishes stacked wet after sanitzing
    Correction: Do not stack dishes wet. Allow to air dry to prevent bacterial growth.
