    Observation: Employees observed handling ready-to-eat sandwich rolls with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

* Walk in needs to be colder to ensure that foods are held at 41*F or less. Walk in freezer was stuck on defrost- repair called and now is refreezing. Need drain plugs for 3 vat sink. Ensure that all staff is trained in correct WASH, RINSE and SANITIZE for all dish ware and food contact surfaces.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. System broken none in use.
    Correction: SET UP 3RD VAT WITH 50 PPM CHLORINE SOLUTION AND PROVIDED TEST STRIPS and used to sanitize dish ware.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (corrected on site)
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: SODA FOUNTAINS.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
