Observation: Observed food thermometer is not calibrated to ensure accuracy. Temperature was not stable . Thermometer may need a new battery or may need to be replaced. **It is important to be able to accurately measure food temperatures.**
Correction: Fix or replace thermometer to insure that food temperatures can be taken properly and are accurate within +/- 2 degrees Fahrenheit. Then, calibrate food thermometer according to manufacturer's specification as necessary to ensure accuracy.

Observation: The waste oil container is stored on absorbent material (i.e. - the ground surface).
Correction: All refuse containers are to be stored on smooth, nonabsorbent material that is sloped to drain.
- Refuse - Covering Receptacles
Observation: Dumpster or outside refuse container was open or uncovered. Observed one side door open and it appeared that both top covers were missing. Also, observed some other items laying around beside the dumpster that should be cleaned up and discarded properly.
Correction: Cover all waste containers when not in continuous use. Keep area around dumpster clean and free of additional trash so as not to attract rodents, etc.

- Thawing
Observation: Improper methods used to thaw chicken breasts. Observed bag of chicken breasts sitting out on table. PIC stated they were put there to thaw for a little while.
After asking more questions, PIC stated that the chicken had only been out on table for 30 - 45 minutes. PIC placed bag in refrigerator after temperature was taken. Temperature was 20 degrees.
Correction: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F (45°F) 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process

Observation: Employees observed working in the food service area without proper hair restraints.
Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Observation: Observed sauces and chopped steak for sandwiches, etc. uncovered inside True 2-door refrigeration unit. Personal food items mixed in with items for the public.
Correction: Cover items before storing in refrigeration unit. Separate personal items from items for public consumption.
- Critical: Food - Potentially Hazardous Food - Cold Holding*
Observation: Salami, ham slices, turkey, cheese slices cold holding at improper temperatures in sandwich prep table/refrigerator.
Correction: Found unit out of temperature at opening (11am) this morning. Repairman was called but had not come at time of inspection. Because of uncertainty as to how long the unit was out of temperature, food is to be thrown out.
