Time control policy initiated for cold items on the buffet. Policy indicates the items that are to be discarded at the end of the lunch buffet that is held from 11:00-3:00. Explained to operator that policy must be kept in the building and provided to the inspector during each routine inspection.
Candy in a bowl at the cash register must be kept covered.
Make sure that all foods, (other than items that are cooling), are covered in the refrigerators.
Discussed FDA form 1-B with operator.

    Observation: The methods used for cooling were not adequate. Garlic/oil/ginger sauce being stored on the counter to cool. Place in an ice bath to cool on the counter, rather than just leave at room temperature, to achieve cooling more quickly.

Operator explained that facility is going to close next week for vacation. When facility re-opens she explained that menu will strictly be Indian food. She also explained that large buffet is going to replace small buffet.

Tuna purchased from Sysco is yellowfin. The box of salmon indicated that salmon is farm raised. Letter indicating what salmon are fed is needed to ensure compliance.

    Correction: Repair the cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: According to the ""consume by"" date on the prepared ready-to-eat (RTE) peas and Indian dish in the refrigerator, the food should have been discarded this morning.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
