    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Observed several cans of food with dents and bubbled lids.
    Correction: Discard or return food products once the packaging is damaged or is in bad condition. Food packages must be in good condition to protect the integrity of the contents so that food is not exposed to adulteration or potential contaminants.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Observed employee cutting RTE tomatoes with his bare hands. Instructed employee to wash his hands and to wear gloves when handling RTE foods.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Food - Washing Fruits and Vegetables (corrected on site)
    Observation: Observed employee sliceing RTE tomatoes straight from the container without washing the tomatoes first.
    Correction: Thoroughly wash raw fruits and vegetables to remove soil and other contaminants before cutting, combining with other ingredients, cooking, serving, or being offered for human consumption in the ready-to-eat form.

    Observation: Observed employee cutting tomatoes, return to the WIC to retrieve another box of tomatoes without removing his gloves and then return to cutting the tomatoes.
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation.

    Observation: Wiping cloths improperly stored between use. Employee was storing the wet wiping cloth on the prep counter between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Observation: The following foods were observed cold holding at improper temperatures: Cut tomatoes IT-49'F, hummus IT-47'F, Lebonese salad IT-44'F. PIC did relocate foods to another cooler.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared ready-to-eat (RTE) noodles and Lebonese salad in the refrigeration unit is not properly dated for disposition. PIC stated that these items had been made a couple of days before inspection.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Temperature Measuring Devices - Food
    Observation: There were no temperature measuring devices in the under the counter RIC's.
    Correction: Provide a temperature measuring device that is accurate within +/- 2 degrees Fahrenheit in the intended range of use.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

    Observation: The following equipment was observed in a state of disrepair and damaged: 1. the rice cooker was held together with duct tape, 2. the doors to the WIC and WIF do not shut properly, there is not a tight fit when you close them 3. The floor in the WIF and WIC are damaged and missing parts 4. the thresholds to both the WIC and WIF are damaged 5. the RIC's at the prep area are leaking in the bottom of the coolers
    Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the euipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The cutting board(s) throughout the facility are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
