Facility open only for catering. Facility will be operating fully (for lunch and dinner) from next week.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation*
    Observation: Raw beef stored over ready-to-eat (RTE) cooked food and vegetables in the walk in refrigeration unit.
    Correction: Operator voluntarily relocated said raw beef to other shelf in said unit.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Operator voluntarily provided date marking to said food.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatories in the kitchen.
    Correction: Operator voluntarily provided paper towels to said facilities.

Notes:
1. Chemical dishwasher observed without sanitizer provide sanitizer and test paper.
2. Provide hand washing sink for food prep area with can opener, food prep table, meat grinder and food prep sink.
3. Light bulb in walk in refrigerator observed not shielded.
4. Caulking between the tiles in floor-wall junctions in kitchen.
5. Outdoor garbage receptacle area must be cleaned and containers must be covered.
6. Provide trash receptacles in restrooms. One covered receptacle in women's restroom.
7. Provide employee must wash hand signs in all handwashing facilities.
All items mentions above must be corrected to schedule a preopening follow up inspection.
