- Design & Functionality of Warewashing Machines (46.591)
--Mechanical warewash equipment does not have an accurate temperature measuring device for the hot water sanitizing final rinse manifold. The thermometer currently is reading 215 F however the actual temperature was measured at 187 F. Replace or calibrate thermometer accordingly to ensure accurate daily monitoring of the water temperature. Mr. Ingram contacted Ecolab to schedule a service visit during the inspection.

--Fire extinguisher on cook line observed with tags dated January 2013. Provide updated tags within 2 weeks.
- Handling Clean Items (46.775)
--Tableware for customer self-service is not displayed so that only handles are touched by consumers and employees. The lower level lounge observed to have knives and forks stored in a cup with the utensil at the top and the handle on the bottom of the cup. In order to prevent hand contact always invert the utensils so the handles are inverted at the top. Mr. Ingram made the corrections during the inspection today.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dust, debris, crumb, or splash. Clean and sanitize the following
- Air Gap Requirement, Design of Backflow Prevention & Conditioning Devices (46.822(c)-(e))
--Prep sink on the cook line to the right of the boiler station does not have an adequate air gap of at least 1 inch. Contact a plumber to install an in-direct air gap to comply. Mr. Ingram checked the lower level for a potential in-direct air gap but the plumbing was observed to be tied into the main building sewer discharge pipe (4") without the air gap.
