    --Observed freshly cooked potato soup being cooled in large plastic containers w/ lids in place just setting in the prep area which is not a proper cooling method. The two soup containers probed from 143*F to 154*F (still in hot hold range). Regulations reviewed and soup was placed in an ice bath to cool down properly. Monitor temperatures vs time to ensure compliance.

NAst y dirty , unsanitary place no hair nets used or no washing of hands by waitress at all . Kitchen has trash stuffed all over counters all dirty . Carpets and flooring filthy flies All through the restaurant .
