An employee (waitress) came in the kitchen from the dining room and donned gloves without washing her hands. COS: Inspector educated about proper hand washing and the employee washed their hands.
- KDA_3_30211A1b - --In the walk in cooler, raw shell eggs were stored in wire baskets directly above a container of mayo and a container of shredded cheese. COS: Employee moved the ready to eat items.
- KDA_3_50116A1 - --In the steam oven, grits were 122.8F, not maintained at 135F or above. COS: Employee reheated the grits to 192.3F.
- KDA_3_50118A2 - --In the single door cooler at the west end of the kitchen, containers of cooked mashed potatoes, cooked cut potatoes, baked potatoes, and sliced ham had no date marking. COS: Employee said these items were cooked/sliced on Sunday (8/23) and labeled the containers. In the walk in cooler, 2 whole watermelons that were carved and had cut up watermelon inside had no date marking. COS: Employee said they were cut on Sunday (8/23) and labeled them.
- KDA_3_50118A3 - --In the walk in cooler, fried chicken was dated 9/1. Inspector asked the employees when it was cooked. Employees said it was cooked on Sunday (8/23). Item was dated for 10 days. COS: Inspector educated about proper date marking for 7 days and employee labeled the container 8/23-8/29.
- KDA_4_30212B - --The establishment only have the dial probe thermometers that cannot test foods that are thin. Inspector suggests getting a thermometer that can take temperatures of items like philly steak, hamburger patties, sausage patties, etc.
