KDA_2_30114I - --An employee picked up a piece of fruit that had fallen to the floor with her gloved hands. She discarded the piece of fruit and the gloves she was wearing. She then put on new gloves and continued working on preparing fruit. Corrected on Site (COS) - explained the hand washing violation/educated employees on hand washing.
KDA_4_60111C - --There is a running fan in the dining area that is blowing into the kitchen. There is an accumulation of dust on the back of this fan.
KDA_Defacto - --Fruits and vegetables being washed in an indirectly plumbed sink in colanders. --Hot Case: Breakfast on a Stick - 141.2 F --Hot water dishwasher sanitizing at 165.2 F --Quaternary ammonia test strips provided. Expiration in 2017. Note - there is a roll of test strips that expired in 2010, but manager said they're using the other roll. Recommending discarding the expired roll. --Thawing as part of the cooking process. --Walk-in-Cooler: Chili - 39.1 F Milk Cooler: Milk - 36.7 F Milk Cooler 2: Milk - 42.4 F (Note, the cooler was recently open while breakfast was being served) --Wiping cloth stored in 200ppm quaternary ammonia.
