COS-removed the chicken. (Note: no leakage detected. KDA_3_30211A1b - --In the walk in cooler there was a large metal food grade pan of vacuum sealed raw whole beef muscles being stored in between a box of ready to eat sauces and a large metal food grade pan of ready to eat baked chicken. COS-removed the raw meat. (Note: no leakage detected). In the Kenmore RIC, there was a metal sheet pan of raw beef stored directly on top of a package of ready to eat shredded pork. COS-rearranged the items. KDA_3_30212 - --On the utensil rack in the kitchen there was a plastic squeeze bottle with a white granular substance. An employee said it was salt. COS-labeled the bottle salt. KDA_3_30412B - --In the flour bin there was a metal scoop handle in direct contact with the flour. KDA_3_50118A2 - --In the Kenmore RIC, there was an open gallon of milk without a date. An employee said it was opened on 12/28/15. COS-date marked the item. KDA_4_20211A2 - --In a utensil drawer, there was one metal tong with red rubber tips that were melted (not easy to clean). There was also one rubber spatula with cracked edges. COS-discarded the tong and trimmed the spatula. On the utensil rack in the kitchen there was one plastic lid that was cracked/broken. COS-discarded. KDA_4_60111A - --In a utensil drawer there was a metal cheese grater that had dried food debris on it and stored clean. COS-moved to the ware wash area. In a round metal utensil holder there was one metal spatula with dried food debris on it and stored clean. COS-moved to the ware wash area. Below the steam table there were 2 metal food grade pans with dried food debris and stacked clean. COS-moved to the ware wash area. On the utensil rack in the kitchen there were 7 metal lids and one round plastic lid with stickers/residue left on them and stored clean. COS-moved to the ware wash area. On the utensil rack in the ware wash area, there were 5 round plastic lids with stickers left on them and stored clean. There were also 3 round plastic bowls with dried food debris and stacked clean. COS-discarded 4 lids and moved one lid and the bowls to the ware wash area. On the clean dish side of the mechanical dish machine there were 2 metal food grade pans with dried food debris and oil residue left on them. COS-moved back to the ware wash are. KDA_4_60111C - --There is dust build up on the fan blowers in the walk in cooler. There is dust/grease build up on the oven hood filters. KDA_4_90311A - --In the ware wash area, there was one box of single use napkins being stored directly on the floor. There was also one package of single use plastic to-go containers being stored directly on the floor. COS-placed them on a shelf. KDA_5_20515B - --The handsink to the right of the mechanical dish machine leaks below the sink. The handsink behind the bar is slow to drain. The right hot water faucet at the 3 compartment sink in the ware wash area leaks when the water is shut off. KDA_6_50112A - --There is grease build up on the floor below the grill and fryers. KDA_7_10211 - --Below the 3 compartment sink in the kitchen, there was a working spray bottle with clear liquid and not labeled. An employee said it was bleach water. COS-labeled the bottle.
