  • KDA_Defacto - --Cold Holding: North Milk Cooler - milk 34F. South Milk Cooler - milk 38.2F. Walk in cooler - milk 39.2F. Freezer ok. --Corn - 135F. --Hot Holding: Warmer (kitchen)- meat mixture 140F. Warmer (cafeteria) - 145F ambient. Tilt Skillet - meat mixture - 159F. --No sanitizer (chlorine) registered on test strip at the dish machine. Manager called in maintenance for repair. Retested at 100ppm. Note - establishment was not actively doing dishes. --Wiping cloth sanitizer tested at 300ppm quat.
