Observation: The potato dicer was not cleaned from the previous day. The dicer was taken apart and set aside for cleaning during this inspection. The probe thermometer was greasy. The thermometer was cleaned/sanitized during this inspection.

Observation: There is no Certified Food Protection Manager with management and supervisory responsibility employed by the establishment. REPEAT VIOLATION. The owner has committed to taking the class in March 2016
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: There is a broken thermometer in one of the refrigerators and no thermometer in the other refrigerator.

Observation: The outside top of the upright refrigerator and upright freezer are soiled.

Observation: The quaternary sanitizer in the spray bottle was too strong---This violation was corrected during the inspection by diluting the solution to the required 150-400 ppm.

Observation: There is no Certified Food Protection Manager with management and supervisory responsibility employed by the establishment which was required by April 1, 2015. The owner plans on attending the next available class offered by the Department.

Observation: There is no small diameter probe thermometer suitable for checking temperature of meat patties and similar items.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: One refrigerator does not have a thermometer and the other refrigerator does not have a easily viewable thermometer for frequent temperature monitoring.
