Observation:Improper sanitizer concentration. Must maintain chemical concentration between 200 and 400 ppm.
- Plumbing system maintained in good repair
Observation:1)Plumbing drain leak on hand washing sink in back.2)Leak on drain handle on the rinse basin of the four compartment sink. 3)Leak on fill spigot part of plumbing on vegetable single compartment wash sink in back by dry goods and single service item storage. Must maintain all plumbing components in proper working order.
- Drying mops
Observation:Mop head in bucket. Mops must be hung or stored in a manner to properly air dry.

One staff chewing gum, not allowed while handling foods, removed now. Corrected on site.
- Drying mops
Wet mop resting in bottom of mop sink, must hang in manner to air dry, hooks full with brooms, will hang over wringer of bucket to allow to air dry some.
- Separation from food, equipment, utensils, linens, and single service
Has a case of chemical cleaner on shelf next to single use food items, must keep all chemicals below and not adjacent to foods and food service items, moved chemical to lower shelf now. Corrected on site.
