  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation: There were raw shell eggs stored over lemons and limes in the walk in cooler. Corrected on site by moving eggs to a lower shelf.
  • Using a handwashing sink- operation and maintenance
    Observation: The hand sink behind the bar was also being used as a dump sink for used ice from drinks.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: There were packets of butter on top of the hot holding buffet. Corrected on site by discarding and established that butters are to be kept at 41* or under.
