    Observation: Overall labeling is good, but cookies and rolls in display case for self -use have no label and warning sign on them. Packaged food must be labeled with common name of the food and major food allergens contained. Provide information.
  • Cleaning frequency of food contact surfaces (non-PHF/TCS)
    Observation: Food–contact surface, such as, 1) prep tables, 2) cappuccino cup dispensers, and hand contact surface such as refrigerator door handles and pizza holder in the kitchen has food debris and grease on touch an sights. All equipment and surface must clean, rinse and sanitize at frequency to avoid build up.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: Doors of hot-holding unit with pizza and other cooked food has grease build-up. Manager stated that other employee is sick,only one employee is working now. Clean and maintain cleaning at frequency to prevent future build-up.
  • Posting inspection reports
    Observation: Most recent inspection report was not available to view. The most current inspection must be posted in a conspicuous place for consumers to view at all time.
  • Drying mops
    Observation: Mop was found wet in empty mop bucket. If not in immediate use the mop must be allowed to air dry to prevent buildup of bacteria. Corrected on site.
  • Sanitizers
    Observation: : QA sanitizer was too strong over 400ppm when tested. Employee has self dispenser, but did not check sanitizer concentration with test strips. Must use trest strips to check QA sanitizer concentration between 200ppm and 400ppm. Educated staff on how to make sanitizer solution at proper concentration. Added more water and corrected at time of inspection.
  • Smoke free air act
    Observation: No-Smoking sign posted on any entrance doors. Must post state approved no smoking sign at every entrance and exit to be used by public or employees. Window cling given during inspection.
