Observation: Cold taco makeline holding tomatoes, cheese, and lettuce at 57*-60* on the top half of unit. Bottom half holding cheese and tomatoes at 42*. Ice was added to the top half and food was changed out.

Observation: BOH was soiled with food and grease accumulation. Areas are not cleaned properly and at a frequency to eliminate buildup of food and grease. Attention needed at dish area, doorway of walkin cooler, oven area, chicken cooler doorway, and interior of chicken cooler. Photos taken of these areas. Cleanliness issues throughout the rest of BOH at wall floor junctures and under and around equipment.

Observation: 6-501.12 Cleaning, Frequency and Restrictions. (A) PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean. Chicken cooler, wall/floor under breading station, dish area shall be cleaned more frequently to eliminated the buildup of food debris.

Kitchen, cooking room, dishroom, mop room, dry storage room, walkin coolers and freezer are all heavily soiled. Large amount of food and debris accumulation at floor/wall juncture, on walls, under equpiment, and in doorways (of coolers and between rooms). Standing soiled water by ice machine, hand sink, and mop area.
