Tostitos dip was observed on floor by beverage wall. All food items must be stored at least 6 inches off the floor to prevent contamination, and facilitate easy cleaning.
- Roasts held at a temperature of 130°F or above
Pre-cooked items (chinese, boneless wings, sandwiches, etc) in True open air cooler were temped @ 45.7*F. All potentially hazardous food (PHF) must be maintained at 41*F or less to prevent buildup of bacteria. All PHF was discarded at time of inspection.
- Cleanability of floors, walls, and ceilings
1) Cove base by dry storage entrance is coming off wall. Must repair or replace cove base to prevent deterioration of wall and buildup of bacteria. 2) Ceiling lights in dry storage area do not appear to be shatter resistant or covered. Must provide an adequate cover or shatter resistant bulbs to prevent contamination.
- Material characteristics of non-food contact surfaces
1) Observed cardboard being reused to line shelves. Must not reuse cardboard because it is not a smooth, easily cleanable, and nonabsorbent surface. Must replace with material that meets all above criteria. 2) Shelves by receiving dock in dry storage have bare wood bottoms. Must paint wood bottoms with two coats of light colored paint or varnish to prevent buildup of bacteria.

Habco Coke and Pepsi (single door) coolers do not have thermometers inside. Must have a thermometer in all coolers that store PHF to ensure adequate temp of PHF.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Raw meats were stored above ready to eat (RTE) food in cooler, and in wrong order (beef above pork and chix above pork). All raw meat must be stored below RTE food and also in order of required internal cooking temp. Order as follows: RTE food, pork, beef(whole first then ground), chicken.
