Observation: Mop was bunched up in the mop bucket. Must allow mop to air dry to prevent buildup of bacteria.

Observation: The following areas are no longer smooth, easily cleanable, and nonabsorbent: cloth towels under blenders and shake collars, walk in cooler walls, laminate counter top in poor condition (hand sink area, flavor cart, and under bun warmer). Must resurface or replace to prevent buildup of bacteria.

Observation: Norlake freezer in-between ice cream machines has soiled gaskets. Must keep clean.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Ice cream machines in front area do not have a working thermometer inside. 3 of 4 are broken.
- In-use utensils, between-use storage
Observation: Scoops were observed outside of running water. Must store scoops in running water if they must be rinsed out.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Walk in freezer in basement has some food debris on the floor. Must keep clean.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Some items were date marked and some were not (chicken, bacon, tomatoes, lettuce, etc.). Must date mark all ready to eat food with date opened/prepared.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Sanitizer was tested too low at time of inspection. Mus maintain quat sanitizer between 200-400ppm for adequate sanitation.

Observed ready to eat foods (hot dogs, tomatoes, cooked chicken, etc.) without date mark. Must date mark all ready to eat food with date opened/prepared and then discard within 7 days unless entire contents will be used within 24 hours.

Mens RR does not have handwashing sign posted. Must post a sign informing employees when to wash hands at all handsinks used by food service employees.

1) Observed ice scoop stored in ice bin. Must not store ice scoop in ice bin to prevent contamination. If scoop is stored in product then it must have a handle and the handle must be outside of the product. 2) Ice machine has mold buildup. Must empty, wash, rinse, and sanitize ice machine before using again.
