Observation:Discarded brisket. Brisket was cooked on July 11, 2015 cooled and re-heated on July 14, 2015 to an unknown temperature at 10:30 a.m. at 1:45 p.m. the meat temperature was 46 degrees.

Observation:Ham separated from the original package was not labeled with the contents of the zip loc bag.

Observation:Ice scoops were stored in the ice machine with the handles down in the ice.

Observation:There is not a serv safe certified person on staff. Require within 6 months to become certified.

Observation:Open sliced ham was stored in a ziploc bag, there was not labeling of what the item was or the date opened.

Observation:Brisket was cooled intact in a roaster pan with tinfoil over the top. The brisket was not sliced or placed in a shallow pan.
